Spicy Beans

Delicious easy recipe to eat as a main or side dish.

1 tsp rapeseed oil

1 medium onion, peeled and chopped

2 garlic cloves, finely chopped

1 green chilli, finely chopped

4 cm (10g) piece fresh ginger, finely grated

½ tsp cumin seeds

1 x 400g tin baked beans, reduced sugar and salt

1 tbsp chopped fresh coriander


Add the oil to a small saucepan over a medium heat. Add all the ingredients except the baked beans and coriander, and cook for 10 minutes until the onion is softened and golden. Stir in a slash of water to lift any golden-brown bits off the bottom of the pan, then add the beans and heat through until steaming hot.

To serve, garnish the beans with coriander.

I like to serve this with an egg fried using low-calorie cooking spray.
