Granola

This granola is high in fibre and contains natural sweetness from the dates. It is delicious served with fat-free Greek yoghurt and fruit.

Ingredients
- 110g Jumbo Oats
- 75g mixed seeds
- 70g nuts, almonds, or pecans, chopped
- 1/2 tbsp Olive oil
- 1/2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp vanilla extract
- 2 dates, made into a paste with boiling water
Instructions
- Preheat the oven to Fan 150
- In a medium bowl add the oats, seeds, nuts, and spices, then mix well to combine.
- Chop the dates into small pieces and add to a small bowl along with 1 tablespoon of boiling water and mix into a paste. Add the olive oil and vanilla extract then add to the dry ingredients.
- Line 2 large baking trays with greaseproof paper. Spread the granola across the trays. Cook in the oven for 10 minutes, then toss and return to the oven for a further 10 minutes.
- Remove from the oven and leave to cool. Store in an airtight container.
