Granola

This granola is high in fibre and contains natural sweetness from the dates. It is delicious served with fat-free Greek yoghurt and fruit.

Ingredients

  • 110g Jumbo Oats
  • 75g mixed seeds
  • 70g nuts, almonds, or pecans, chopped
  • 1/2 tbsp Olive oil
  • 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 2 dates, made into a paste with boiling water

Instructions

  1. Preheat the oven to Fan 150
  2. In a medium bowl add the oats, seeds, nuts, and spices, then mix well to combine.
  3. Chop the dates into small pieces and add to a small bowl along with 1 tablespoon of boiling water and mix into a paste. Add the olive oil and vanilla extract then add to the dry ingredients.
  4. Line 2 large baking trays with greaseproof paper. Spread the granola across the trays. Cook in the oven for 10 minutes, then toss and return to the oven for a further 10 minutes.
  5. Remove from the oven and leave to cool. Store in an airtight container.
